2 celery ribs
3 carrots
1 yellow onion
1 russet potato
1/2 cup red bell pepper
4 garlic cloves
1 and 1/2 pounds chicken breast (or thighs)
1 (14.5 oz) can petite diced tomatoes
2 tbsp fresh parsley
1 tbsp dried oregano
1/2 tsp red pepper flakes
4 cups water
4 cups chicken broth
1 tbsp salt
1/2 tsp black pepper
1 1/2 cups ditalini pasta

A hearty, flavorsome soup loaded with vegetables, shredded chicken, and ditalini pasta.
Substitute olive oil for butter. Add diced celery, chopped onion, diced carrots, diced potato, and chopped bell pepper into
1/4-1/2″ pieces. 1 1/2 ribs celery, 1 carrot, 1/2 yellow onion, 1/2 red pepper, 1 small russet potato
Add olive oil once dutch oven is hot to medium high 3 tbsp olive oil
When pan is hot, add celery, carrots, potato, onion and pepper. Cook for 5 min until veg begins to soften;
Stir in the tomatoes, parsley, oregano, garlic, and red pepper flakes.
1 14 oz can tomatoes, 1 tbsp parsley, 1 tbsp oregano, 2 tbsp minced garlic, 1/2 tsp red pepper flakes
Add water and broth – cover and bring soup to a boil on a medium low flame 5 cups of water, 2 cups of chicken stock
Cover the pot partially and simmer for 1 hour
